We have an exciting opportunity for the position of Head Pastry Chef to join the Kitchen team in our 5 red star hotel!

We are looking for an enthusiastic Head Pastry Chef to lead, coach and develop our team of twelve Pastry chefs. Furthermore, you will develop new, original dishes and be passionate about combining different flavours.

As a Head Pastry Chef you will be challenged to cater for diverse meal periods such as big wedding events, as well as our AA Rosette Afternoon Tea.

You will be trained to develop you managerial and leadership skills and you will be actively involved in the Senior Kitchen Management Team!

Requirements for a candidate Head Pastry Chef:

  • Previous experience in a five star hotel at least as an Assistant Head Pastry Chef
  • Being able to motivate the team members and to act as a team player

STAFF RESTAURANT CHEF MANAGER

We are now seeking to recruit an enthusiastic Staff Restaurant Chef Manager with a 'can do' attitude.

The responsibilities of the Staff Restaurant Chef Manager are:

  • To carry out all tasks as directed by the Executive Sous chef / Executive chef and to assist in any other areas or duties within the hotel upon request.
  • To ensure that the service of all meals is to the standard laid down bt the Company and meets the Executive Chefs specification.
  • Pro-actively monitor food purchases, food wastage, stock rotation and levels on a daily basis to ensure the monthly food cost budget is achieved.
  • To regularly be present in staff restaurant during peak meal service periods, ensuring your guests are looked after.

KITCHEN PORTER

We currently have an exciting opportunity for a Kitchen Porter to join our Stewarding team, on a Full-time basis.

We are now seeking to recruit an enthusiastic Kitchen Porter who has the ability and drive to deliver 5* service at all times, with a positive, 'can do' attitude. Teamwork and good communication skills are essential, as is a keen eye for detail.

The responsibilities of a Kitchen Porter are:

  • To maintain clean, hygienic and safe standards within kitchen and BOH areas.
  • To ensure cleanliness of work areas and maintenance of various cleaning equipment is to established standards
  • To ensure floors are kept clean at all times.
  • To ensure all dirty equipment is cleaned and sanitised to standard set in pot wash areas.
  • To ensure that silver, glassware, chinaware and kitchen equipment are properly washed, cleaned, dried and stored according to established standards.
  • To ensure that the use of chemicals and machinery is adhered to as per COSHH and training standards in the department and not to use any machine or chemical if you have not been trained in their use.

  • take ownership for presenting new ideas for menus, presentations and working practices to your section’s Sous Chef
  • monitor portion control, fresh food and dry store orders to ensure that wastage is kept to a minimum

The ideal candidate for the Chef de Partie is required the following:

  • Great cooking skills
  • An ability to stay calm and work as part of a team during a busy service
  • Organisational aptitude
  • at least NVQ/SVQ Level 2 or equivalent
